There are no natural blue roses. Botanists have tried for years to create a perfect blue rose. The closest they have got to - a Suntory rose which is mauve in color. Hence, blue rose is often used to symbolize mystery or attaining the impossible.
Be it the Blue rose crown that Lyanna Stark received from Aegon Targaryen in the book Song of Fire and Ice or Blue Rose Trilogy consisting of Koko, Mystery and the Throat. They are all linked to a something unattainable.
